Located in a countryside in Araki, Fukui City, “Snowcafe” is a cafe that was built by renovating an old house built in 1933. You can taste its specialty fluffy chiffon cakes in addition to purchasing home-cooked roasted beans in the fussy cafe.
You can choose from the three flavors: Plain Chiffon Cake you can taste a flavor of eggs and Hokkaido-grown flour, Matcha Chiffon Cake using plenty of Uji’s high class light brown tea, and Chocolate and Cocoa chiffon cake full of cacao flavor. Plus, you can top with whip cream, tsubuan (sweet, semi-crushed red bean paste), and fruits if you want. There are a few secrets of the deliciousness of Snowcafe’s chiffon cakes.
By a process called “Double Expansion” that expands a dough twice, it brings out the best possible expansion rate of the dough, which is the key to creating a fluffy texture. There is also a secret in the size. Snowcafe says that the volume of the dough that can be eaten deliciously increases by using large 23-cm diameter pans.
In adidition to those points, the cakes can be beautifully finished by using their original chiffon cake pan removal knife uniquely developed by taking advantage of the Echizen traditional blades, a traditional industry of Echizen City, Fukui Prefecture.
